Recipe: Asha's Fruitcake

4 cups ripe banana, mashed
2 eggs, beaten
1½ cups sugar
½ cup buttermilk
½ cup butter
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
½ tsp nutmeg
¾ to 1 cup nuts, chopped
¾ to 1 cup raisins
¾ to 1 cup dried cherries
brandy, rum, or scotch (optional)

Soak the raisins and dried cherries overnight in some brandy, rum, or scotch, whichever you prefer.

Cream the banana, eggs, sugar, buttermilk, butter, and vanilla together until smooth.

Sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

Add the dry ingredients to the creamed mixture, blending just until all of the ingredients are moistened. Don’t overmix.

Drain the dried fruit and mix into the batter with the nuts.

Spray a bundt pan with cooking spray and pour in the batter. Bake at 350° F for 40 to 45 minutes, or until a knife comes out fairly cleanly; don't overcook.

For a snow-like effect, sprinkle with a little powdered sugar before serving.
