Recipe:  Wild Rice Salad

1 cup uncooked wild rice
1 red bell pepper
½ large red onion
3 medium scallions
½ large apple
⅔ cup sliced almonds
½ cup dried cherries
¼ cup balsamic or red wine vinegar (whichever flavor you prefer)
⅓ cup olive oil
2 tsp salt
1 tsp black pepper
1 tsp paprika
1 Tbsp herbes de Provence

Cook the wild rice and allow it to cool.

Chop the bell pepper, onion, scallions, and apple and mix together in a large bowl. Add the cooled wild rice, almonds, and dried cherries, mixing well.

In a small bowl, combine the vinegar, olive oil, and spices and blend well.

Mix the dressing in with the wild rice mixture, stirring to coat all of the ingredients evenly. Refrigerate and serve cold.
